This week I'm sharing a sweet (and nourishing) treat that I regularly make for families!
Edible treats abound in February. Sweet is a grounding flavor and beneficial for new mamas. But make sure that you're consuming top-notch fuel, not straight sugar, to power healing from birth and making milk for your baby.
I once had a client who ate a bag of marshmallows for dinner. Bad decision.
These cookies are big on nutrition, small on sugar, and oh-so-soul-satisfying. Partners and big kids love them too!
(Bonus: you can eat cookies with one hand!)
Molly's Lactation Cookies
1 stick butter or 1/2c coconut oil - softened/melted
1 mashed banana or 1/2 c applesauce
1 heaping tablespoon nut butter
½ c coconut sugar, or whatever sweetener you prefer
½ t cinnamon, ground cardamom, or ground nutmeg
3 T brewers yeast
2 T ground flax seeds
Combine until uniform.
2 c oats
1 c+ flour (I used a combination of sorghum, coconut, almond, and rice)
1t baking powder
½ t salt
Combine, then stir in:
1c nuts, dried fruit, chocolate chips, etc
Dollop onto ungreased cookie sheet and bake at 350 for 12 minutes. Makes ~15 cookies.
Eat hot or cold, day or night, whenever you have a free hand!
